
Not because I have my head in the sand or because I don’t care, I do – I just need an emotional break, so here is a picture to make you smile!
This weekend I travelled to Leeds to hang with my dear Fit Pro pal Nikkie Riozzi and share the love of freestyle dance inspired fitness aka ‘DYBO Helen Style’ with Nikkie’s gang (and guests). It was wonderful to see dance fans of a different style embrace and commit to my choreography and give it their all, very rewarding and despite the long drive, was totally worth it. I shall be heading back to Leeds for Nikkie’s charity event in November and she will be (hopefully) returning to teach her old skool Funk and House Styles to us in February.

Feedback please
I ask weekly (and daily at classes and one to one’s) for feedback and this week is no exception… I also ask that you share what we do and the information we provide with your wider social and professional circles. We need your support so we can keep supporting you!
Summer is coming!!!

A good breakfast
At all times (especially times like these) we need to start the day with a good breakfast to see us through the day and stop us from turning to comfort snacks
So here’s Abbi’s breakfast recommendation enjoy!
Paleo “Eggs Florentine”
This is adapted from The Body Coach’s recipe, and uses kale instead of spinach so is a bit of a twist on the original Florentine, but it’s a leafy green that carries even more goodness and despite absolutely hating the stuff I find it’s use in this recipe more bearable! There’s no hollandaise sauce – it’s very calorific, I don’t think it needs it – but something like humous or a sprinkle of cheese can be used as a topping if you like. Also to make it veggie, the bacon can be replaced with grilled halloumi.
½ baked sweet potato
1 large free range egg
1 large handful of Kale, no tough stalks
1 lean bacon medallion, chopped
2 spring onions
Ground garlic
Pinch of salt
Coconut oil
- Chop the baked sweet potato (something I always like to have pre prepared in the fridge to make this a quick breakfast/brunch) into small cubes and microwave for 30secs
- Add a pinch of salt, ½ teaspoon of ground garlic and 1 chopped spring onion and mix, then form into small patties (usually makes 2/3)
- Fry the patties, spinach and bacon & 1 spring onion in plenty of coconut oil until cooked and the patties slightly browned n the outside
- Whilst this is frying, poach the egg to your liking
- Serve patties topped with the spinach & bacon mixture, poached egg and a sprinkle of seeds if you have them to hand.
