I hope you have had a lovely weekend and despite the drizzle, you have that feeling of freshness and hopefulness that we can often experience in the Spring.

It must be Springtime as I’ve been continuing with my environmental spring clean and this time tackled under the bed!……..dun dun deeeerr!!!!

So what did I find apart from lots of dust (Easter) bunnies?

Well plenty of things that I’ve been looking for, receipts, odd socks, slippers and a hair brush!

What a great metaphor for my life that is – what I’ve been looking for was there all the time and right under me!

Sometimes we can all wonder why we are not achieving what we want, why we have lost our ‘mojo’, have a dip in our energy and maybe gained a few pounds, feel a bit achy and stiff or have bags under our eyes and tired looking skin, and so on. If we retrace our steps and go back in our thoughts to a time and place when we had those things we appear to have lost, go back to doing what we know works for us and be with the people and at the places that inspire our success then we can repeat those actions and achieve/ find/have the things/feeling etc. that we want to have?

‘Always doing the same thing and expecting a different result’ is often a well used expression to get folks to change what they are doing in order to find a better outcome, but why don’t we ‘continue to do what does work for us to gain the results that we want’?

I had a dinner engagement this weekend and drank and ate the things that I know exasperate menopause symptoms and guess what, that’s exactly what I got, poor sleep, uncomfortable gut, low energy, low mood, blemishes and big bags under my eyes.

So rather than wringing my hands and wishing it wasn’t so, I’m taking the actions required to get me back on top! Not for any other reason than I want to feel and be healthy, happy and firing on all cylinders! I have rediscovered the things that are under my nose (bed) and am putting them in place.

I recommend that you do the same and whilst ‘variety is the spice of life’, some times doing what we know works and what we love is the best way to get and have ongoing great results!

Easter Recipe

Bliss Balls!

Ingredients:
  • 1/4 cup raw almonds, soaked overnight
  • 1/4 cup raw cashews, soaked overnight
  • 1/2 cup organic desiccated coconut
  • 30g chopped cacao butter, softened
  • 3 tbsp premium coconut milk
  • 2 tbsp rice malt syrup (or natural sweetener of choice/ or 6-8 drops liquid stevia)
  • 1/4 cup almond meal
  • 1/4 cup cashew meal
  • 1 tsp vanilla bean powder or vanilla extract
  • 1 tbsp cacao powder

Method:

  1. Drain and rinse soaked nuts.
  2. In a blender (I use a Vitamix) blend almonds, cashews, coconut, cacao butter, coconut milk and rice malt syrup until well combined (some texture is ok).
  3. Transfer mixture to a mixing bowl. Add almond meal, cashew meal and vanilla and combine well.
  4. Halve mixture and add 1 tbsp cacao powder to one portion. Mix well.
  5. Shape tablespoon portions of each into round balls. Transfer to fridge to set.
  6. Keep in an air-tight container in refrigerator until ready to eat.

Tips:

  • You can replace cashew meal with additional almond meal.
  • You can roll the balls in extra desiccated coconut.

Worth trying with honey, coconut sugar or maple syrup which are healthier forms of sugar.
