
I have to admit that another Bank Holiday has really created ‘discombobulation’ in my body clock resulting in a parking ticket (I parked to do my weekly shop, which normally happens on a Sunday, and didn’t buy a ticket )- now that’s blown a hole in the budget, doh!!
Be warned I shall probably be a day out all week, ho hum and, as Pooh would say

I had a very busy Bank Holiday here at HQ with choreography for ‘Independance Day’ that is less than two weeks away (19 May 2-6pm). I’m really excited, they are such happy, friendly and fun days and we get to dance for the afternoon, yay.
I also had assessments, reports and programmes to write but I love the brain ‘stretch’ that my varied roles give me.
The building work here is cracking on and the new PT Gym and Studio will soon be finished, will have a grand opening and you can come and see for yourself.

Friday’s Fitness Yoga course is very popular so again, I recommend you book.

Tofu Asparagus Soup
Asparagus is in season (yum) and it’s really good for our Gut Biome (it’s a good source of pre biotic). Try this yummy recipe…
Ingredients
For the stock:
1 onion, roughly chopped
2 carrots, roughly chopped
1 leek, roughly chopped
2 sticks of celery, roughly chopped
1 clove of garlic
Small bunch of parsley
1 bouquet garni
2 litres of water
Salt and black pepper
For the asparagus soup:
½ block plain Tofu, roughly chopped
2 tbsp olive oil
1 onion, diced
1 stick of celery, diced
400g asparagus, trimmed weight
1 litre of the homemade vegetable stock
Salt and white pepper to taste
Method
- To prepare the stock, place all of the ingredients in a large pan, bring to the boil then cover and simmer gently for 1 1/2-2 hours checking occasionally to ensure that there is enough liquid left in the pan and adding more water if necessary.
- Sieve carefully to remove the vegetables and season with salt and pepper.
- To prepare the soup, gently fry the onion and celery without colouring in the 2 tbsp of olive oil in a large pan. Add the asparagus and 1 litre of homemade stock. Bring to the boil then simmer for 15 minutes. Allow to cool slightly for 5 minutes.
- Blitz the tofu in a food processor until smooth for 3-4 minutes, add the soup and whizz until smooth.
- Season to taste with salt and white pepper.
- Any leftover stock can be kept for 2-3 days in the fridge or frozen for use at a later date.
PS. When we are short on time we use a ready made stock, sssshhhh.
