
I hope you have enjoyed the Half Term week and are ready to embrace June with gusto!

Declan and I travelled with (almost all) of the Waters clan to Drumcliffe, Sligo in Ireland. We made the pilgrimage to the ‘motherland’ to celebrate Dec’s Mum’s (Margaret) 90th birthday. We all had the most amazing and inspiring time with many wonderful experiences and OMGosh moments. For me the quote of the trip came when we coincidentally met two of Margaret’s playmates and co mischief makers from her childhood up until she left for England , aged 18. The elder of the two ladies (80 years young) greeted us all incredibly warmly and then introduced her younger sister (who is also a ‘Sister’). She said in her wonderful Irish way “this is my sister, she is a Nun which also means she gets none!”…she was hilarious and seriously the funniest women I have ever met😂. I have so many tales of the friendly, funny old school Irish people we met. I came away reminded of the quote by famous Irish poet, Yeats (whom by the way was a fishing buddy and best friend of my mother-in-laws grandfather! and they are buried in the same cemetery, sadly divided in death by the cemeteries Catholic Protestant division!)…

I love that and want to continue living life with that attitude. I am refreshed by the Irish fresh air and laughter and ready to inspire you all to live your best life in my simple way via a full week of classes and one to one appointments.
This week…
We have a new routine for Monday Boogie Fit so it’s a great night to return or start afresh. We have a wonderful mix of styles in Cardio Dance ( and another prenatal new one), an effective and inspiring circuit for Tuesdays HITT, and a funky/latin routine for Dance Fit. There is a new ‘Old Skool Step’ course starting this Wednesday at 6.30pm – remember to book ahead as it was sold out last time. Plus more fun, effective fabulousness for Wednesday’s Barre Fit, Thursday’s Contemporary Stretch and Dancespiration plus a new Fitness Yoga course commencing on Friday (again, book ahead as it fills quickly)
Holiday season is starting with several of my regular One to One clients going away, so if you want an appointment with me it’s a good to time to make one.



Broccoli Cauliflower Soup

“I used frozen broccoli and cauliflower florets and they worked wonderfully. I love frozen veggies when they are added to soups or smoothies. They aren’t my favorite for sautéing because the texture changes after they are frozen, but you can’t tell when they are blended up.
This soup is fairly thick, which makes it more satiating (in my mind at least). 🙂
PRO TIP: Before eating, never forgo some chopped chives and a swirl of good olive oil. Mmmmmm.
Note that this recipe doesn’t make much, just enough for two people, or two meals for one person. Luckily, this is something that can easily be doubled or tripled and frozen in jars for later!”
Ingredients (Serves 2)
- 2 tbsp olive oil
- 1/2 yellow diced onion
- 1 garlic clove
- 2 cups broccoli florets
- 2 cups cauliflower florets
- 1 cup veggie stock
- 1/2 cup coconut milk
- 2 tsp sea salt
- Optional: 2 chives, extra olive oil and/or extra sea salt for topping, black pepper
Instructions
- Set a large stock pot on medium-low heat.
- Dice the onion, mince the garlic, then add to the pot with the olive oil.
- Stir occasionally for about 5 minutes until the onions are translucent.
- Add the broccoli and cauliflower, stock, coconut milk, and sea salt.
- Turn the heat up to medium-high and let cook until the vegetables are fork tender.
- Use a blender and combine until the soup is completely mixed.
- If using, chop the chives and sprinkle on the top of the soup with an extra drizzle of olive oil and sea salt.
