
Am I the only one who has to get back on UK time? (apart from Adele and Jo who were actually in Rio!).
I tried to stay up to watch the Closing Ceremony and check out that amazing Brazilian dancing, but the sandman came and took me off to the Land of Dreams. I feel like I’ve competed and performed myself this morning but nothing that a glass of water, a few deep breaths and a ‘cup of Joe’ can’t fix.
I’m shocked to hear that Rio has run out of money (due to last minute spending on the Olympics), putting the Paralympics under threat. I loved London’s event and am truly inspired by ‘super humans’. Let’s hope there is a rescue plan.
It’s a roller coaster ride of emotions isn’t it when watching these athletes who have devoted their life (and that of their families and coaches/support team etc.) to pull on the GB tracksuit and go for Gold. I was stunned by Tom Daley’s 6 near perfect dives in the qualifying round only to be unable to reproduce that form the next day, I think heartbroken and shocked are the adjectives best applied to Tom and us all. Dealing with setbacks and disappointments is part of a winners’ skill set, some don’t and give up, lose the plot or become embittered. The skills of the coaching and support staff around Tom (and other disappointed athletes such as the Taekwondo athlete Lutalo Muhammad who was beaten into Silver literally in the last second of the fight!) will be tested at this time and this is when the true brilliance of a coach is measured, as they deal with a distraught athlete whilst handling their own enormous grief too.
I hope these athletes can learn the lessons that are there to be learned and be spurred on to find a way forward and get the results they deserve.
The same might be said for all of us at any time and this is particularly pertinent at this present time of A level results and university applications.
We might be those who are dealing with disappointment or supporting those who are. Remember that “there is no failure, only feedback”, we can learn how we didn’t get the result we wanted and by learning that lesson, we get closer to finding the correct way to get what we want.

Healthy and Yummy Food for the Summer
I was chatting with DYBO member Tanya the other day and heard how she has had a bumper crop or courgettes – other members have told me the same, so here is a truly simple recipe to help eat well and use up those courgettes.
You need (organic is best in my view)
- 8 small fresh courgettes
- A couple of glugs of your favourite virgin olive oil
- Juice of 1 lemon
- Fresh thyme leaves (optional)
- 1 tsp grated Parmesan (I use vegetarian)
Slice the courgettes into thin strips, I use an vegeatable peeler or my spiraliser!
In a bowl, toss the courgette strips in the oil, lemon juice and a pinch of salt to taste (aiming to balance the saltiness with the acidity of the lemon), add a few fresh thyme leaves.
Leave to rest room temperature for about 30 minutes. The courgette will wilt a little and take on the flavours of the oil, lemon and salt.
Serve either as a main dish for one or side dish for up to four, with fish, chicken, halloumi, feta or mozzarella cheese or smoked tofu.
Yum!
