The morning after the weekend before and believe it or not, I’m up early – a little stiff but nothing I can’t handle. After a weekend presenting at the IFS Convention in Blackpool where I get to share some of my unique ways of delivering health, fitness and dance with other professionals and participants, I’m back to the day job. Because I work across various contexts and, depending upon which context I connect with all you lovely folks, people are often surprised to hear about the various things I get up to all in the name of helping people be the most happy and healthy they can be. I have often said that fitness is a broad church and cross-fertilization of ideas and concepts is important to ensure that all aspects of our various needs are well served. Gaining inspiration from a variety of sources will stimulate new ideas and practices and I’m 100% committed to looking for and offering creativity in thought and action. It concerns me that for quite some time many health club, sports centre members (and teachers too) have had their fitness offerings from the same source. Many instructors/participants have been spoon fed materials, ideas and brand brainwashing which, in my view, stunts their growth and results in lack of professional, creative and inspirational freedom – all of which have caused growth gaps in the development of newer fit pros and their participants. At this event there was far more independent freestyle (although a fitness colleague describes my offerings as ‘all styles’, which I really like) classes and the event organizer had run a new presenter training program to assist new talent, fab!

The word at the event was that ‘freestyle/ all styles’ is on its way up again which thrills me! The feedback I have received for my presentations has been

Overwhelmingly kind and despite battling with awkward teaching environments, times, temperatures and sound system issues I was able to get my message out there and teach the lovely people in my sessions DYBO style.

We have two weeks of 4-day working weeks with Easter in the middle. A wonderful opportunity to meet up with family, spring clean, chill out and catch up with those chores put off during the winter. I have an Easter recipe to help you keep on track with your healthy eating during the chocolate Easter egg fest!! And I’m running classes throughout Easter (except on Good Friday and Easter Monday) to help you maintain all those wonderful benefits of being fit plus burn off those extra easter feast calories!!

EASTER BUNS

We love hot cross buns but they are very doughy and whilst one isn’t a crime if you are trying to keep on a low sugar/starch diet its not helpful for your cause I’m going to try these over Easter…

 

Low Carb Hot Cross Buns

Ingredients

            1 1/2 cup almond meal.

            1 1/2 cup arrowroot flour.

            1 teaspoon bi-carbonate soda.

            1 teaspoon baking powder.

            2 teaspoons ground cinnamon.

            1 teaspoon mixed spice.

            1/2 teaspoon ground nutmeg.

            1/2 teaspoon ground ginger.

            1/4 teaspoon ground cloves.

            2 eggs, lightly beaten.

            150 g grass-fed butter or 1/4 cup coconut oil, melted.

            2 tablespoons rice malt syrup.

            1 teaspoon finely grated orange zest.

            50 g 85% dark chocolate, chopped.

Crosses

            1 egg white.

            1/4 cup desiccated coconut.

Directions

 

1. Preheat oven to 180ºC / 350ºF. Lightly grease a 12-hole muffin tray.

 

2. Mix almond meal, flour, bicarbonate soda, baking powder and spices together in a bowl.

 

3. In a separate bowl combine eggs, butter, syrup and orange zest. Add wet mixture to dry and combine well. Fold through chocolate pieces.

 

4. Pour mixture into prepared tray.

 

5. To make crosses, whisk egg whites and desiccated coconut. Drizzle over unbaked buns in a cross shape with two spoons or using a piping bag.

 

6. Bake for 20-25 minutes, or until lightly golden and a skewer inserted into the centre comes out clean.

 

7. Best served toasted under the grill with butter.
