I hope you have had a wonderful Bank Holiday Weekend doing all the things that make you happy and ideally, healthy!

After a morning of PT on Saturday I put on my dancing shoes and headed to Pineapple Dance Studios to get my ‘groove on’. After a sweaty, fun class Mini and I walked back through Covent Garden and along the South Bank. London during a Bank holiday has a very happy, party atmosphere and as I didn’t have to rush home I decided to join the party on the South Bank, listening to music ,chatting to strangers and eating ‘Street Food’, I loved it. You know that I love routine but occasional, spontaneity is fun too.

When we want to achieve a goal, creating a good plan and sticking with it is key to success. My life plan is to have lots of fun, be fit and healthy – mentally and physically – so some spontaneity fits the plan perfectly.

Remember though that life without some routine results in lack of focus, direction, progress (even chaos) and rarely leads us to achieving our goals.

Julie Tzivanidou became a Granny for the first Time when Rebecca delivered a gorgeous boy weighing 8lbs and 8oz on Friday.

Movie Star

Our Emily Kuhl is appearing in the new Elton John movie ‘Rocket Man’. Emily had a wonderful time filming her scenes last year and when attending the Movie Pre-Screening last week. Not only will you see Emily in the pool scenes but she also advised and coached the other performers involved. Bravo Emily xx

Coconut Lime Ice Lollies

These creamy coconut lime ice lollies are such a tasty paleo or vegan treat! Just 3 ingredients and naturally sweetened, these are creamy, dreamy & delicious. Yum!

To make these look extra pretty, add a little fresh lime zest to the outside right before serving (like I did in the photos). 

 

Ingredients

  • 1 (13oz) can full-fat coconut milk
  • Zest and juice of 1 lime
  • 34 tbsp honey

 

Method

  1. Combine all ingredients in a blender and process until completely smooth. This won’t seem to take long, but the longer you process, the finer the zest will become and the less likely you’ll be to end up with all the zest sinking to the bottom of the lollie mould.
  2. Taste and add additional honey or lime as desired. (Note that the flavour will develop as they freeze.)
  3. Pour mixture into your mould and insert sticks. (See notes for more tips)
  4. Freeze at least 3 hours or until completely solid.

 

Notes

You can control the amount of lime that goes into the recipe. If you want these extra lime-y, you can add the juice of 2 limes instead of just 1. It’ll come through a bit more!

Also, note that sometimes the lime zest will settle at the bottom of the lollie mould if you haven’t blended it much, which means the first bite might be a bit lime zest-heavy. A cycle through the blender can help.

Protein boost? If you like, you add 1 scoop collagen protein to these (for paleo, not vegan) along with the other ingredients in the blender. It’ll blend right in!

Getting them out of the mould. If you’re new to making your own lollies, you’ll want to run the outside of the mould under water for a few seconds to loosen it from the mould. Then, using a side-to-side motion, you’ll be able to pull it right out. Be sure you’ve frozen them at least 3 hours so they’re solid first!
