Yeah that’s me and I love it. Every day I learn more about many things, especially about how the human body and mind works. I read a lot, watch a lot and listen a lot and I often learn something every time I work with my clients and classes. This weekend I was invited as a guest to the Fit Pro Live event (it’s the first time I’ve attended rather than presented) and I was really excited to be able to relax and see what was being delivered by other fit pros of various disciplines. The event was aimed at PT’s and the timetable was predominantly focused on functional training, frequently referencing the myofascia and biotensity (see I’m not the only one banging on about it). Marketing, business development, how to use social media and a little motivation stuff too. I saw a new treadmill that I fell in love with and am looking down the back of the sofa to get all my pennies together to invest in one. I also brought a Power Plate home to try out. I attended some sessions with Jenny Burrell, a specialist in women’s health and whilst I already knew much of the material, I loved her approach and delivery, layering knowledge and being inspired is wonderful. It made me think about how I can serve my lady clients better and I came to the conclusion that would like to run a pelvic health workshop to help you girls (of all ages) with pelvic /floor health. There are many signs and symptoms that suggest our pelvic floors are struggling to function well with day to day life – if it doesn’t feel right down there (imagine me gesturing towards the pants region) then improvement can be made and if steps aren’t taken now it’s only going to get worse! Let me know your thoughts.

 

Many of you contacted me about the BBC programme which presented research that Dance is the best way to keep super fit and youthful in mind and body – well we’ve always known that, haven’t we and it seems the scientists agree. Go us!!

Sweet Potato Crust

Sweet potatoes make a great crust for all types of pies; this recipe will make a delicious and healthy breakfast, lunch or evening meal!

Ingredients


2 medium sweet potatoes
1 teaspoon coconut oil,
1 (5-ounce) bag baby spinach,
1/2 cup low-fat milk,
1/2 teaspoon sea salt,
1/4 teaspoon freshly ground black pepper,
1/4 teaspoon crushed red pepper,
4 large eggs
2 large egg whites
1.5 ounces feta cheese, crumbled

 

Preparation

  1. Preheat the oven to 350°, then peel and slice sweet potatoes
  2. Grease a pie dish, then fill the bottom of the dish with a layer of sweet potato slices. Cut the sweet potato rounds in half and fill around the edges of the pie dish; round side facing up. Once the entire dish is filled, drizzle with oil. Bake for 20 minutes. Turn heat up to 375°.
  3. For the filling, heat a nonstick frying pan over medium heat. Add spinach; sauté 3 minutes. Remove from heat; cool.
  4. Combine milk and the rest of the ingredients in a bowl; stir with a whisk. Arrange spinach mixture in crust; pour egg mixture over spinach. Sprinkle with feta. Bake at 375° for 35 minutes. Stand 5 minutes; cut into 4 Portions. And serve with a crisp salad.
