
I sit here writing to you with a massive smile on my face following another ‘Fabulicious’ Independance Day teaching alongside Body Confidence Ambassador and talented choreographer/teacher, Zoe McNulty.
It was an afternoon of laughter with wonderful attendees, many whom arrive uncertain and lacking confidence. Seeing them realise that they can do more than they ever thought they could and start to relax, open up and reach for new highs is simply one of the most rewarding parts of the day. We welcome women (and men but they are rare visitors) of every size and shape (all human shape, ha ha) varying fitness levels and walks of life (our guests included Celebrities, Teachers, Fit Pros, Mums, Nannies, Psychologists) supporting each other as they join together in a love of dance and movement. Research has shown that one of the key ingredients for happiness is to challenge ourselves – do something that stretches our comfort zone daily. I aim to do that with you every week at every one of our classes, maybe that’s why those who regularly come to our classes are a happy bunch.

Summer is on its way and its time to come out from hibernation, stretch and move

Yay, its nearly Pancake Day and it’s one of my favourite meal treats of the year. I want to stick to my gut friendly diet and so I’m going to cook these on Tuesday….
Low Carb Pancakes
Ingredients
- 220g each scoops vanilla protein powder (I use the my Biome shake or SLM shake by Synergy)
- 1 large, very ripe banana
- 1/8 cinnamon
- 1/4 baking powder
- 1/4 salt
- 2eggs
Instructions
- In two bowls, separate the eggs carefully so none of the yolk gets into the egg whites. Beat the egg whites for approx. 2 minutes until they form soft peaks.
- Add the remaining ingredients to the egg yolks and beat until smooth. Gently fold 1/3 of the egg white mixture into the banana mixture until roughly combined. Fold half of the remaining eggs whites into the mixture and finally the last portion until everything is well combined.
- Heat a skillet/pan over low heat. Scoop 1/4 c. of the mixture onto the skillet/pan and cook for 60-90 seconds on each side.
Serve hot with berries and yogurt (I use coconut yogurt) – maybe honey or maple syrup to if you want the sweetness
