Firstly thank you, thank you, thank you for all your wonderful Birthday messages cards and gifts. You really did make my Birthday, you are my darling DYBO family and mean a great deal to me, I am touched by your kindness. For my birthday weekend I tried to pace myself (being at the back end of that nasty bug thing) whilst I celebrated. I supported my pal Monica with her new Yoga technique workshop on Saturday, then had a fabulous posh dinner out. On Sunday I danced with the Generation Dancers in London, the class was nice and simple and easy on the brain and body so I wasn’t over doing it I promise.
Sorry
For only the second time in my teaching career I had to cancel classes last Monday due to illness, so sorry! I did reach out to colleagues to see if they could cover but no one was available so I was left with no choice but to cancel.
Keeping Well (even thriving) at Christmas
For many, Christmas is a time of stress and extra work, here are a few tips to help maintain your mental and physical health and wellness, not to mention your temper!
No. Learn to say no to events and jobs that don’t make you happy or can, at this time of year, tip you over into overwhelm. Simply explaining that you have insufficient time, mental space or energy should be enough for those who matter.
Don’t take it personally… when others say no because they are trying to stay on top of all they have to do.
Toxic people. It’s nice to be nice but if being with a certain person/people leaves you feeling less than your best self then politely extract yourself (it never feels good to be rude or lose our temper).
Balance. The further we move away from our base state (the state where we operate optimally) the less well and balanced we feel and the more likely we are to be ill, so try to maintain your regular routine of healthy food and exercise to maintain all your body functions, nothing is more important to those who love you than your health!
Planning. Some folks seem to thrive when flying by the seat of their pants, not me, I operate well when I have a plan I also need, yes need, to schedule some ‘alone time’ which for me is dancing, walking the dogs and exercising. This Keeps me mentally and physically in good humour and tip top just as a Christmas fairy wants to be!!
Delegate and accept help. Martyrs are boring and hard to live with so be aware of what you can reasonably do within a reasonable time frame, and how you can delegate those tasks that can be given to others. Also accept offers of assistance. Train family members to be part of the entire Christmas experience – it’s important to them and for you to enjoy Christmas without feeling resentful and worn out so invite offers of help and delegate tasks that they might enjoy and be good at.
Drink water and keep calm! We are often dehydrated by all the rushing around and forgetting to drink enough water, add the extra alcohol to the mix and we can really dehydrate our bodies and brains, affecting, brain, heart, respiratory, digestive functions and energy levels.

Paleo Christmas Crackle (adapted by HCW from Physical Kitchen)

Ingredients
- 4 ounces Banana chips (or enough to evenly cover a 12×17 baking sheet)
- 1/2 cupcoconut sugar
- 3 tablespoons ghee
- 3 tablespoons coconut oil
- 1 tablespoonwater
- 1 cupdairy-free chocolate chips or 100% cacao chips
Instructions
- Preheat oven to 400 degrees
- Line the baking sheet with parchment paper, then arrange the banana chips in an even layer
- Combine the coconut sugar, ghee, coconut oil, and water in a medium saucepan. Turn heat to medium-high and begin stirring the mixture so the oil and ghee combine with the coconut sugar
- As the mixture starts to heat up, whisk it (vigorously) in one direction. The oil and sugar may separate, but continue whisking to combine
- Whisk about 4 minutes, watching very carefully to avoid burning the sugar. Once the mixture is combined and the consistency of melted caramel, remove from the heat immediately. You have two options from here on: Carefully drizzle the caramel on top of the plantain chips, trying your best to coat evenly OR gently pour the caramel on top of the plantain chips and using a rubber spatula, mix the chips around to evenly coat. You will have to do this quickly, as the caramel will begin to thicken once cooled. When the chips are coated, quickly arrange them back in an even layer. You may have to pull them apart with your fingers, as they will be sticky, this step method ensures that the bottoms of the chips to be caramelized as well as the tops
- Place the plantain chips with caramel into the oven and cook for 5 minutes, until the caramel is bubbly. Becareful not to burn
- Remove from the oven and let cool as you prepare the chocolate
- Pour the chocolate chips in to a medium glass bowl and heat in the microwave for 20 second intervals, mixing the chocolate between intervals. Once most of the chocolate is melted, remove from the microwave and stir until all the chocolate is melted
- Drizzle the chocolate on top of the plantains and spread evenly with a spatula
- Let cool at room temperature. If desired, add a little pink himalayan salt to top
- Place the pan into the refrigerator to chill. Once chilled and the chocolate has hardened, gently break off pieces to desired size and serve!
Yummy!
Have a fab week,
Love you.
Helen xx
