
What a day – Independance day was absolutely fabulous, Antonio created two wonderful and challenging routines and I was thrilled with the engagement and performance of my ‘Soul Motion’ piece that came together beautifully. Once again it’s a true blessing to see so many like-minded dance fans come together with humour, joy and support for each other as we go on a creative journey, going beyond what we thought were our limits, taking ourselves outside of our comfort zone, meeting the challenge and growing from the process (plus making new friends).
For Karen and I it makes the months of preparation absolutely worth it.
I extend my thanks to Antonio for coming out of London and sharing his passion, my co-conspirator Karen Smith for everything she does behind the scenes, Steve Benton for the many hours of music editing, photos, videos and pulling it all together for public viewing, for Declan and his venue preparation, set up and take down with his assistant, Jo Hobbs – your help is invaluable, Sarah in the office, thanks to Charlotte for transporting Antonnio and of course all you wonderful ‘Independancers’ who travel from near and far and give your all on the dance floor.




Back to reality and the ‘day job’ today and of course I’m fired up and ready to go for the week ahead.
I’m planning on a new routine for the Cardio dancers tonight and of course evolution and variety as always in all our classes across the week.
It’s the final week of the current ‘Old Skool’ Step class (a new course commences the week after next) and the Fitness Yoga Course (a new one commences at the start of June).
So we have a full week of classes his week, but next week (as it’s half term) the schedule looks as follows…
Half Term Week Classes
Monday 27 May, Bank Holiday. No Classes.
Tuesday 28 May, HIIT, Core Power, Dance Fit (6.30,7.15,7.45pm).
Wednesday 29 May, NO STEP, Barre Fit 7.30pm.
Thursday 30 May, Contemporary Stretch 6.30pm No Dancespiration.
Friday 31 May, NO FITNESS YOGA

Strawberry & Pickled Beet Salad with White Balsamic Dressing

Ingredients
For the Dressing
- 2 tablespoons white balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- 1tablespoons olive oil
- 2 tablespoons organic basil (fresh), chopped
- salt and pepper, to taste
For the Salad
- 1/4 cup toasted quinoa
- 2 cups organic baby rocket
- 1 punnet strawberries, quartered
- 1 6.5-ouncepackage beetroot (roughly 5 cooked beets, pickled), quartered
- 1 avocado, diced
- 1/4 cup crumbled feta
Instructions
- In a medium pot, combine quinoa with 1/3 cup water. Bring to a boil, cover and simmer for 15 minutes. Once quinoa is fully cooked, spread out on a baking sheet in an even layer. Adjust oven rack to upper third (about 6-8 inches away from the top) and preheat oven. Roast quinoa for 7-8 minutes, stirring halfway through. Be sure to check frequently as you don’t want the quinoa to burn, just to get crispy and crunchy. Set aside to cool.
- Meanwhile, make the salad dressing by combining all of the ingredients in a small glass bowl and whisking with a fork to combine. Season with salt and pepper to taste.
- In a large salad bowl, add rocket, strawberries, beets, avocado and crumbled feta. Add the cooled quinoa and drizzle the salad dressing over top. Toss to combine. Serve and enjoy!
