 – Important dates for your diary later in this message! –

I had a conversation with a pal about the rain and she was complaining, saying that it was sunny elsewhere in Europe (well it was sunny here a few days ago too). I felt compelled to remind her that here in the UK it’s common to be raining in October and that the sun shining where it isn’t supposed to be indicated a world climate in distress! I agree that the grey wet weather can really get on our nerves and I’m very sorry to hear that some folks have experienced flooding. We can choose how we perceive that rain, I hear those same people flooded out of their homes say how thankful they are that no one is hurt and everyone they care about is safe, acknowledging that they can replace things, not people. I see wonderful people pulling together to help each other and I see the best of people at those times.

Who am I to complain that it’s raining when they have so much to deal with? I have the choice to put on my waterproofs and walk my dogs in beautiful lush green and autumnal coloured woodland – for which we have our rain/sun mixed climate to be thankful for.

I am trying my best to be an ‘eco warrior’ and have converted to using environmentally friendly products, use the car less, turn down the heating, recycle, and am always looking at how I can help reduce my negative impact and increase my positive influence on our planet and our community. I’ve recently informed a supplier that until they improve their product packing I shall not be purchasing from them, voting with my £’s and feet might inspire them to take action.

I’m choosing to moan less about the little things (like it’s raining) and focus on the important things ie. the health and wellbeing of myself, my loved ones and you my darling DYBO family – everyone of you is important to me, plus doing what I can to make a positive difference.

I believe that my doing so helps my mental and physical health because I’m controlling what I can control i.e. being fit and healthy benefits me, the people I love and serves and my community. I can contribute society rather than take, which leaves the NHS services to focus on those who truly need it and, if one day, I need it too the NHS will still be there because we have all behaved in the same way. Ignoring our mental and physical health hurts not only us, but also our loved ones and community as a whole. Let’s take better care of our selves and our environment and help others do the same.

Buy local and give local small businesses and self-employed your custom. Steer clear of cheap throwaway fashion and stuff. We often don’t value it, it breaks or isn’t fit for purpose and ends up in landfill. At this time of year the shops are filling with plastic toys, decorations and unnecessary stuff generally, most of it ends up in the dump eventually.

Thursday 24 October 7.30pm Dance with Daisy. Daisy will be teaching a beautiful and easy to learn dance routine with her special lyrical style and exquisite choreography combined with her kind and encouraging teaching skills.

25 October – No Freestyle Fitness Yoga class, I’m taking the night off.

28 October. 6.30-8.30pm – Make some noise for the “fantabulous Teresa Wheatley” who will be teaching three fab classes

6.30pm Boogie Fit for beginners/returners & dance fitters

7.15pm The Middle Bit (all levels)

7.45pm Cardio Dance for more experienced Dance Fitters.

Jack Fruit Curry, Yum!

Jackfruits have a meaty texture (when harvested green they are great for savoury meals, they become sweeter when ripe) a bit liked pulled pork or shredded Peking duck. I love it and it’s a lovely meat replacement in a curry.

Jackfruit has a low glycemic index and provides some fibre, protein and antioxidants, all of which may promote better blood sugar control. The fibre also feeds good gut bacteria.

Jackfruit contains a variety of antioxidants (Vitamin C, Carotenoids and Flavonoids) that may be helpful for preventing the development of several chronic diseases, such as heart disease, inflammatory conditions and diabetes. Anecdotally, Sri Lankan women are recommended to eat Jack Fruit to assist lactation and quality of breast milk.

Serves 4

  • 1tbsp olive oil
  • 1tsp cumin seeds
  • 1tsp mustard seeds
  • 2 red chillies, chopped
  • 2 onions, chopped
  • 5 garlic cloves, chopped
  • 5cm piece of fresh ginger, chopped
  • 2 x 400g tins of green jackfruit pieces
  • 400g (14oz) uncooked rice (or Quinoa or carb free rice as an alternative for keeping dietary starch low)
  • 1½tsp ground coriander
  • 1tsp ground turmeric
  • 2tbsp tomato purée
  • 500ml jar of passata
  • 2tbsp coconut cream

Method

Add the oil to a pan with the cumin and mustard seeds, pan-frying for 1 minute to release the aromas.

Add the chillies, onions, garlic and ginger. Cook until the onions are soft and translucent.

Meanwhile, drain and rinse the jackfruit (to remove as much salt as possible). Cook the rice according to the instructions on the packet.

Add the ground coriander, turmeric, tomato purée and the jackfruit to the onion mixture.

Mix together, pour in the passata, cover with a lid and cook for 10 minutes.

Uncover, shred the jackfruit a bit and allow the sauce to thicken. Add the coconut cream and a little water, if needed.

Mix well. Bubble the curry down sauce is until thick. Serve alongside the steaming hot rice/alternative.
