Brighter, longer days promise us that summer is on its way; I’m definitely a girl who loves the Spring. It doesn’t take much to boost my mood, bike rides and a dog walks through the woods, visiting the blue bells and noting the increasing numbers of buds on the plants, throwing open all the windows in the house to let the winter air out and the spring air in, drying washing on the line and swapping wellies and heavy coats for trainers and lighter jackets. I know the weather can be a bit ‘iffy’ but there’s hope yet for a warm Summer!

On to matters of the figure. You know I always say that ‘fitness is for life not just for the bathing suit season’ well I firmly believe that to be true and yet I’m a realist and know that many folks are more motivated to sort out their diet and exercise with a holiday date booked in their diary. Ok so I’m here ready to advise, support and nag if you so wish regarding matters of Fitness and Food, and so to that end I have a yummy low carb recipe for you to try later on in this missive.

Abbi’s 10k

Abbi is continuing with her running events, completing the Frimley 10k in her personal best time – well done Abbi!.

Now PB’s can really motivate some and that’s great but it’s also ok to simply rock up and participate. Running or walking, it doesn’t matter as long as you do it. If the thought of competing puts you off remember that it’s important to some but not to others and everyone can be and do as they wish.

ONE Pro Cycling in Yorkshire

You might have seen Steve’s boys competing against some of the world’s best in the 3 day Tour de Yorkshire on the telly. Well after 3 podium visits, a 4th place on the second day, final overall 10th place and loads of live TV time (with many commentators calling “the team of race”, Steve is a Happy Coach. Next stop, a 5 day stage race starting on Wednesday in northern France – phew!

Fabulous Fitness Fridays

Our ‘FFY Goes Purple’ was inspired last Friday. Thanks to all who came, I loved it.

Independance DAY

I’m so excited about this event that I’ve choreographed the routines already!

I was inspired after eating out at a local restaurant to find a yummy low carb curry recipe and came across this one; let me know what you think.

Low Carb Chicken Curry

  • coconut oil for frying
  • 1 red onion
  • 2 tbs curry paste (I like Red Thai)
  • 500g chicken thighs diced
  • 200ml coconut cream
  • 250g green beans

Coconut, Cashew, Cauliflower Rice

  • ½ cauliflower
  • 200ml coconut cream

¼c cashews chopped

Low Carb Chicken Curry

  • Heat the coconut oil in a large saucepan and fry the onion and curry paste together.
  • Add the diced chicken and fry until cooked but still soft.
  • Add the coconut cream and simmer for 15 minutes while making the cauliflower rice.
  • Place the green beans (topped, tailed and cut in half) for the last few minutes of cooking time. It’s nice if they remain slightly crunchy.

Cauliflower Rice

  • Grate Cauliflower
  • Place the grated cauliflower into a large saucepan, add the coconut cream and stir. If cream is too thick, add some warm water.
  • Simmer until the cauliflower is cooked and the coconut cream/milk has been absorbed. Stir constantly to avoid sticking to the pan.
  • Add the chopped cashews and mix through.

Serve immediately
