I hope you have had a lovely Easter Bank Holiday and getting back to work/school routine hasn’t been too stressful.

I was a guest at a Training Day in Central London on Saturday – even if I learn nothing new I am grateful for the opportunity to layer knowledge and recap, experience other fitness educators and mingle with fellow fit pros and this training did exactly that for me. Pinnacle Education is a lovely group headed by a fabulous lady, Teresa Wheatley who I recommend wholeheartedly.

After a bit of socialising I headed of to Pineapple to dance with Antonio – remember he is our Guest Teacher at Independance on 19th May (there are some spaces left so book now to take advantage of our Easter Bunny offer! Details below!) What a wonderful way to spend a Saturday.

The rest of the weekend was room and clutter clearing until we dropped, a proper Spring clean for our environment really helps makes us feel back in charge of our life journey and often goes hand in hand with cleaning up our ‘lifestyle act’ regarding food and exercise too.

Coconut Protein Cookies

Ingredients

  • 1.5 cups of shredded coconut flakes
  • ½ cup of sunflower seeds
  • ½ cup of high-quality protein powder
  • 1/4 cup of honey
  • 1 teaspoon of vanilla
  • 1 teaspoon of cinnamon
  • 2 tablespoons of coconut oil
  • 1/8 cup of water

Instructions

  1. Preheat oven to 300 degrees F.
  2. Roughly chop sunflower seeds or other nuts you may wish to use in the blender until broken up into chunks.
  3. Place all ingredients into a bowl and stir together, if you notice that it is too crumbly than try adding in another tablespoon of coconut oil and possibly more water.
  4. Scoop cookies onto a cookie tray.
  5. Gently press the cookies down to flatten.
  6. Makes about 18 cookies.
  7. Bake for about 15 minutes.

Additional Notes:

  • Can use 2 cups coconut shreds if you do not have/want sunflower seeds.
  • Can use any other kind of nut or seed
  • You can use any flavoured or unflavoured protein powder to change up the flavour.
  • You can put the coconut whipped cream recipe in between to make an incredible coconut cookie sandwich!
