
Was being sung out loud and proud this morning, to Lili the rescue Pup who is one year old today. She has had a birthday weigh-in and apart from that everything is as usual – cuddles, ‘walkies’ and rough and tumble play with her adopted bro and sis. You are probably thinking, ’Why are you telling me this? (and are you a nutta’ HCW), well, as always, there is a purpose.
The world is full of rubbish news; it’s easy to forget to look for reasons to be cheerful (thank you, Ian Dury) even the smallest of things are worth a little acknowledgement to lift our mood, and that of the people around us plus the person being celebrated. Good cheer and positivity is like a virus and is caught easily so look for opportunities to be infected by it and to infect others!
Other proven mood lifters are getting out in the sunshine (there is some out there as I type this CBCU for you), going for a walk or run, putting on some uplifting music and dancing (you don’t need to be good, just relax and enjoy), doing some exercise. Avoid being alone for too long, alcohol, dreary and depressing TV (and people) sitting for too long and being inactive physically. Train yourself to look on the bright side and deal with problems/concerns as they arise and get help a.s.a.p. rather than being stuck. Eating well, drinking plenty of water and sleeping well are all positive actions to take for being mentally and physically healthy.

Paleo Crumble
I absolutely love fruit crumble and as Apples and Blackberries are in season, we can enjoy them now and stay on our healthy eating plan.
So yes we can have out crumble and eat it!
Serves 6
Ingredients:
4 apples (about 750 g in total), peeled, cored and chopped into 2 cm pieces
85 g honey
1 tablespoon coconut oil
Finely grated zest of 1 orange
1 teaspoon ground cinnamon
½ teaspoon vanilla powder or 1 vanilla pod, split and seeds scraped
320 g fresh or frozen black berries ( or any type of your choice)
Coconut yoghurt, as accompaniment, I use Co Yo, (vanilla is my favourite) which is non dairy and has no sugar either.
Crumble topping
100 g (1 cup) almond or hazelnut flour
65 g (1/2 cup) macadamia nuts, finely chopped
60 g (1/2 cup) pistachio nuts, finely chopped
40 g (1/2 cup) shredded coconut
4 tablespoons coconut oil, melted
85 g honey
½ teaspoon ground cinnamon
1 pinch of sea salt
Method:
Preheat the oven to 160°C.
To make the filling, combine the apple, honey, coconut oil, orange zest, cinnamon, vanilla pod and seeds or powder and 3 tablespoons of water in a saucepan. Cover and cook over medium–low heat, stirring occasionally, until the apple softens, about 5 minutes. Add the berries, cover and cook for 3–4 minutes until the berries start to burst. Remove the vanilla pod (if using).
Meanwhile, to make the crumble topping, place all the ingredients in a bowl and mix well.
Spoon the filling evenly into a 1.5 litre baking dish. Sprinkle on the crumble topping to cover. Bake for 15–18 minutes until the crumble is golden brown, checking from 10 minutes onwards to make sure it doesn’t burn. Remove from the oven and allow to stand for 2–3 minutes before serving.
Serve with lashings of coconut yoghurt.
