As I write this I have the Beach Boys song going round in my head – you know the one, “Good, Good, Good, Good vibrations’ No?? (tough crowd)…”Taxi”!!!

Thanks for your feedback regarding last weeks CBCU, I hear that it kicked a few butts and got them moving again. Great news!

It seems that what puts some folks off returning to classes, training or healthy lifestyle isn’t what they think others will say but rather they themselves, facing their lost fitness and gained weight and not being able to cope with how they speak to themselves, their own dissapointment and self critisicm. I don’t believe that negative self-criticism provides sufficient impetus for sustained effort. It might get us moving to start with but being a bully to yourself is exhausing and often demotivating setting up negative self talk and a polarity response. Consider this statement “I’m too overweight and unfit and must do something about it” compared to “I want to be leaner and fitter and want to make it happen”. The first is negative, unkind, away from and externally motivated. The second is positive, supportive, towards achievement and internally motivated.

Setting up our life plans to be ‘towards an outcome we want’ rather than ‘away from ‘what we don’t want’ results in a more positive and maintainable mind set which in turn motivates us to take and maintain the necessary actions to get there.

So the first step to being and staying as we want to be is to create a positive mindset with matching thoughts, language and actions. That’s the groundwork necessary for ‘Good Foundations’ on which to build success.

Read on for news about this week’s classes, what our class members and friends have been up to, plus my Epsom Salts deal and a yummy recipe.

You know that I advocate 3 x weekly baths in Epsom Salts to help with aching muscles and joints plus, softer skin  and much more, and you know I’m always saying, get some! Well I’ve done the leg work for you. I have just taken a massive consignment of 3kg bags and will pass them on to you for just £8 ( RRP is £9.95). Collect from me or at class.

Courgette and Chicken soup

Ingredients

  • ½ heaping cup diced red onion
  • 2 celery sticks, diced
  • 1 large carrot, diced
  • 2 garlic cloves, minced
  • 1 small pinch of red pepper flakes
  • 3 teaspoons fresh thyme (or 1 teaspoon dried thyme)
  • 3 teaspoons fresh oregano (or 1 teaspoon dried oregano)
  • 4 chicken thighs, bone-in, about 1.75 pounds
  • 2 bay leaves
  • 6 cups chicken broth, low-sodium
  • 2 cups water
  • 3 medium Courgettes

Instructions

  • Place a large soup pot over medium heat and add in the onions, celery, carrots, garlic and red pepper flakes. Cook for 3-5 minutes or until vegetables “sweat” and onions are translucent. Add in the thyme and oregano and cook for another 1 minute, stirring frequently.
  • Place in the chicken thighs and bay leaf and pour in the chicken broth, water and cover and let come to a boil. Once boiling, lower to a steady simmer and cook for 30 minutes. After 30 minutes, remove the chicken and peel off the skin and discard. Then, shred the chicken off the bone and set aside, with any juices. Place the bones back into the soup pot and simmer for 10 more minutes, uncovered.
  • While the bones simmer, slice the courgettes halfway lengthwise. Then, spiralize them, using Blade C. Set aside.
  • Remove the bones and bay leaves and discard. Add the reserved shredded chicken back to the pot along with the zucchini noodles. Cook for 5 minutes or until zucchini is al dente or cooked to your preference. Serve warm.

(I use Quorn chicken pieces or smoked Tofu instead of meat)

Enjoy xxxx

Have a fab week and remember “I’m picking up Good Vibrations, I’m laying down Good Foundations”…Ha Ha!
