
I’m writing the blog today on the aeroplane following 4 days of exploration and discovery in Iceland. We arrived to snow and ice just as the UK was bracing itself for the same. The difference being that Icelandic people pay no heed to the snow, even though they slip and slide around just like we do they just wear more clothes! I was surprised at the lack of grit and snow clearing, the tourist sites were death traps of compacted snow and thick ice. Actually they want snow! The snow creates the glaciers which are significantly shrinking year by year. They usually have snow from
November ’till March but this year it arrived only two weeks ago, and the glaciers are much smaller already – global warming is blamed. Despite the early hour I’m feeling blessed and grateful for having such an action packed four days where we (Jo and Angie, the Birthday girls!) experienced geothermal spas, geysers, huge and partly frozen waterfalls, the northern lights, whale watching, black volcanic beaches and glacier trekking. Phew! Over in a blink and we are on our way home by 10am Monday morning! Thanks for inviting me girls it’s been AWESOME.


Replacement Class
Sadly the snow on Friday meant classes didn’t run, so Sarah had to cancel Fitness Yoga, we will organise a replacement class at the end of this course.

Februaryitis
When I was lecturing at the college I noted that many students developed ‘Februaryitis’ – symptoms of which are low mood and motivation plus general lethargy and inactivity all of which creates low mood and motivation lethargy etc. So buck the trend. Fill up on wholesome, healthy veggies lots of water plenty of fresh air walks and exercise. Play upbeat music, laugh loud and heartily and go out with happy, positive and upbeat people (just like us at DYBO !)

If you can’t make our regular class, remember we have 11 to choose from every week, and sometimes a change is as good as a rest and you will be happy you did!

Kale Soup
Ingredients (serves 4)
4oz Kale
1 tbspoon Olive oil
1 Garlic clove (chopped)
2 large Tomatoes (chopped)
1 large Onion (chopped)
1 Celery stalk (chopped)
1 Large Carrot (peeled & diced)
1 large Sweet Potato (peeled & diced)
2 Vegetable stock cubes
1 Tbspoon ground Turmeric
Water (enough to make up to 1600ml)
Salt & Pepper to taste.
Method
Saute the onions in the oil for 2 mins then add the carrot, sweet potato and garlic and continue for another 6 mins, stirring regularly
Add the tomatoes, celery, stock, turmeric and water (recently boiled).
If using a soup maker, cook for a further 20mins and set on blend.
If using a standard pot, bring to the boil and simmer for for 20 mins. Use a hand blender to achieve a smooth consistency or allow to cool and blitz in a food processor/blender before reheating to temperature.
