Get your woolies out and wellies on – it’s going to get a little chilly and wet again. No worries, I have plenty to make you feel hot hot hot!!!

I’ve had such a busy week and weekend that my head is spinning but it’s all good and I was doing everything I love!

Even I find talking all day tiring (!) but sharing my knowledge and experience about ante post natal exercise (a subject about which I’m very passionate) is a true honour. I spent Sunday teaching teachers about how to care for their pregnant and post natal clients. 8 hours of talking is a challenge – even for me !!

Whilst I was dropping knowledge bombs for Instructors Steve’s One Pro Cycling riders gained a second placing and top team award at the Rutland International Classic and DYBO Diva Rachel Davies won a Silver Medal in Belgium at the Brussels Synchro Masters….. so a great weekend for the DYBO family.

DYBO Diva Jo Hobbs has also gained her Exercise to Music Instructors qualification. Bravo Jo you worked hard but you got it!

This week we have our brand new class ‘Barre Fitness’ starting (Wednesdays 7.30-8.15pm). I’m so excited to be collaborating with and teaching alongside Daisy West – I’m totally loving it. You will love what we have created for you.

Another favourite class of mine is Freestyle Fitness Yoga (Fridays 6.30-7.15pm). Thank you for the lovely feedback I received from last fridays class. This class is truly a treat for the body and you will feel glorious afterwards. Everyone with or without experience, bendy or as stiff as a board is welcome spread the word!

£55 for 10 Class voucher, valid for 12 weeks from date of purchase (non-refundable or transferable).

£50 Monthly Membership, valid from the first to last day of the calendar month. Includes all classes plus entitles DYBO member discount for Power Hoop with Sarah, Masterclasses, Workshops, Independance days, Personal Training, Sports Therapy, Life Coaching and NLP (non-refundable or transferable).

Yummy Paleo Goodies

Lemon Curd Macaroons

I love Macaroons and would eat these without lemon curd (although it is my Mum’s favourite).You can also try natural sugar-free jam or fresh berries in the middle.

Ingredients for the Macaroons

  • 3 cups sweetened coconut flakes;
  • 2/3 cup coconut or almond milk;
  • 1 egg white;
  • 1/2 tsp. vanilla extract;
  • 1 tsp. fresh lemon juice;
  • 1 tsp. lemon zest;
  • 1/8 tsp. sea salt;
  • Lemon Curd
  • 1 egg white
  • 1/2 tsp. vanilla extract;
  • 1 tsp. fresh lemon juice;
  • 1 tsp. lemon zest;
  • 1/8 tsp. sea salt;

Directions for Macaroons

  1. Preheat your oven to 325 F.
  2. Combine all the ingredients for the macaroons in a large bowl and mix well.
  3. Scoop out about 2 tbsp. of the dough and place on a baking sheet.
  4. Form the cookies into the shape of little bowls, with a depression in the middle (this is where you’ll put the curd later).
  5. Place the cookies in the oven and bake for 15 to 20 minutes.
  6. Remove the cookies from the oven and let them rest for 5 minutes.

Lemon Curd

  1. Combine the honey and ghee in a large bowl and beat with a mixer for about 2 to 3 minutes.
  2. Add the 2 eggs and the 2 egg yolks, one at a time, while beating.
  3. Add the lemon juice and mix for another minute. IT WILL LOOK CURDLED
  4. Cook the lemon mixture in a saucepan over a medium-low heat,  until it gets smooth and creamy.
  5. Increase the heat to medium and cook, stirring almost constantly, until the mixture thickens (about 15 minutes).
  6. Try a taste of the curd, and stir in the lemon zest if you’d prefer it a little tangier.
  7. Transfer the curd to a bowl, cover the surface with plastic wrap, and refrigerate until the curd is cold and thick.
  8. Fill each coconut macaroon with lemon curd and serve.
