Blimey wasn’t the weekend a ‘wash out’? Even the ducks took cover, so ‘wellies’ (ooops auto correct, titter titter) and brollies at the ready, we are British – we can ‘keep on keeping on’!

It was a celebratory weekend, Big congratulations to DYBO family Anne and Rick Wilson who celebrated their 25th Wedding Anniversary in style with a big party, and to our dear Declan who had, yet, another birthday (he was less inclined to celebrate but was forced into it!).

This week I’m excited to be delivering new routines, and choreography for your enjoyment. Keeping you fresh, funky and fit is what I love to do!

It’s a great week to return/start if you have been putting it off. Remember it’s only a couple of months until party season so now is the time!

Speaking of which, do you have any suggestions as to where we hold our DYBO Christmas Party this year? I would love your ideas and inspiration.

These dance classes have been created for INDEPENDANCE, so they are unique, fun and original! We will all be learning together, so please don’t worry about picking up the choreography. After the dance classes, I will lead you through a Stretch n’ Relax class, so that you are feeling good for the week ahead.

Yummy Recipe

You know that I’m a veggie and have been for three years, I am also vegan where possible and am definitely going to give this a try. I found it on Ambitious Kitchen website.

Thai Peanut Coconut Cauliflower Chickpea Curry

Flavourful Thai peanut coconut cauliflower chickpea curry is packed with bold flavours and plant-based protein. Make this cosy, vegetarian dish in one pan for the perfect weekday meal!


  • For the curry:
  • ½ tablespoon coconut oil
  • 3 cloves garlic, minced
  • 1 tablespoon freshly grated ginger
  • 1 large carrot, thinly sliced
  • 1 small head cauliflower, broken into florets (3-4 cups)
  • 1 bunch green onions, diced
  • 1 (15 ounce) can lite coconut milk
  • ⅓ cup water or vegetarian broth
  • 2 tablespoons red curry paste
  • 2 tablespoons natural creamy peanut butter (or cashew butter)
  • ½ tablespoon gluten-free soy sauce or coconut aminos
  • ½ teaspoon Ground Turmeric
  • ½ teaspoon Ground Red Cayenne Pepper, plus more if you like extra heat
  • ½ teaspoon salt
  • 1 red pepper, julienned
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • ½ cup frozen peas
  • To garnish:
  • Fresh cilantro
  • Green onion
  • Chopped peanuts or cashews



Place a large deep 10 inch deep skillet or a large pot over medium high heat. Add in coconut oil, garlic and ginger and cook for 30 seconds, then add in green onion, carrot and cauliflower florets. Saute for 3-5 minute until cauliflower begins to turn a slight golden brown and onions soften.

Next, add in coconut milk, water, curry paste, peanut butter, soy sauce/coconut aminos, red cayenne pepper, turmeric, and salt, and stir well to combine. Then stir in bell pepper, and chickpeas; simmer over medium-low heat for 10 minutes. Taste, and adjust seasonings as necessary. Before serving, stir in frozen peas and simmer an additional minute, then pour into bowls or divide into meal prep containers. Garnish with cilantro, green onion and chopped peanuts/cashews. Great with brown rice or quinoa for a full protein packed plant based meal. Enjoy!

As a keen club runner I had become frustrated at a number of recurring running injuries. After seeing a variety of different physios and chiropractors, with varying degrees of success but no complete solution, I was recommended to Helen. Helen took a different approach to other practitioners, looking at the whole body structure, core strength and flexibility and initially recommending a programme based around my basic posture, rather than the actual location of the pain.
